Valentine’s Day is right around the corner and you know what that means…chocolate. Well, everyday means chocolate for me, but these Cherry Chocolate Paleo Truffles are different than everyday chocolate. That being said, I could eat them everyday. They’re that special.

They’re special because you don’t have to feel guilty about eating them.  Nope.  These little nuggets of joy are made without gluten, dairy or refined sugar.  However, you won’t miss any of that. They are naturally sweetened with dates making them extra yummy and just the right amount of sweet.

Do you want to know what else makes them special? Not not only is there a creamy, nutty middle from the almond butter, but there’s a cherry in the middle! Um…yes please! All this tastiness is wrapped up in delicious dairy- free dark chocolate. My favorite dairy-free dark chocolate is this one from Enjoy-Life.

For these paleo truffles, I used almond butter but you could easily swap that out for any nut butter you like. I think cashew butter would be delicious! Just roll ’em up and decorate with any tasty toppings you like! (hello mini chocolate chips?!)

Now I know these may seem a little intimi-DATE-ing, but they’re so easy! With only 5 ingredients, you really don’t have to save these truffles for a special occasion. I like to keep a couple in the fridge for that after dinner sweet craving we all know too well.

Valentine’s Day

Speaking of Valentine’s Day, what kind of person are you when it comes to this holiday? I agree that we shouldn’t need specific day to show someone you love them, but the reality is that life can just get in the way sometimes, right? Obviously, I love cooking and finding new recipes so Valentine’s Day for me is an excuse for us to cook up something a little different that may not happen on any regular weeknight. Sharing some time in the kitchen together can better than any gift!

Cherry Chocolate Paleo Truffles

Ingredients

  • 10 Medjool Dates *soaked in warm water for 10 minutes
  • 1/2 Cup Almond Butter
  • 1/3 Cup Almond Flour *plus some to roll truffles in
  • 1-2 Tbsp Water
  • 10-15 Frozen Cherries
  • 1 Cup Dairy Free Dark Chocolate
  • Decorations (Sprinkles, chopped nuts, flaked coconut)

Instructions

  1. In a high powered blender of food processor, combine the soaked dates and almond butter. Add in the almond flour and 1 Tbsp water. You can add another tablespoon of water at a time if the mixture is still a little dry.

  2. Scoop a large teaspoon of the mixture and form it around the frozen cherry, making a round ball.  The mixture will be sticky so roll them in a little almond flour to keep them from sticking to your hands.  Repeat using the rest of the mixture and place the truffles in the freezer for at least 30 minutes.

  3. In a double boiler, melt the chocolate, string frequently.  If you are using the microwave, place the chocolate in a microwave safe bowl.  Using 10-15 second increments, melt the chocolate very slowly.  Make sure to stir the chocolate every 10-15 seconds to prevent it from burning.

  4. Remove the truffles from the freezer.  Using a fork or dipping tool, dip each truffle into the chocolate, coating the entire outside.  Place them on a piece of wax paper and decorate immediately before the chocolate hardens. Repeat with all truffles.

  5. Place the coated truffles in the refrigerator until ready to eat.  You can also keep them in the freezer for several weeks.  Enjoy!
