Hi again. I’m here and ready to show you another week of what we ate. I hope last week’s meal ideas and recipes helped all you busy mamas get a handle on the craziness that is dinner time.
If you missed last week, here is the post of what we ate for the week. I went into much more detail about how I meal plan, find recipes and grocery shop. Remember, this is what’s working for me but may not be the best for you and your family. I provide this to hopefully simplify your evenings and worry less about dinnertime.
Monday 4/25-

Paleo Taco Casserole– The Healthy Consultant
Modifications I made: I just swapped the ground beef for ground turkey
Tuesday 4/26-

Drunken Chicken Noodles– Slimming Eats
Modifications I made: I used chicken breasts instead of thighs. I swapped the snow peas for sugar snap peas because they are less stringy. I used 2 Tbsp of coconut aminos in place of soy sauce. I also skipped the Thai chilis and used a little cayenne pepper.
Wednesday 4/27-

Grilled Steak and Chicken Burritos Bowls– Oh Sweet Basil
Modifications I made: I made chicken for myself since I’m not a huge fan of beef. This was great because my husband made steak and egg burritos a few mornings since there was quite a bit of steak leftover. He even made several one morning and saved them for later in the week.
Thursday 4/28-
Homemade Carbonara Pizza- No recipe, I made it up as I went! Here is the general recipe:

Homemade Carbonara Pizza
Easy and delicious pizza for when you want to be healthier than take out but still want pizza
Ingredients
- 1 package Pizza Crust Mix I use this one
- 1 Tbsp Olive Oil + some to sauté spinach
- 1 tsp Italian Seasoning
- 2 Cloves Garlic minced
- 4-5 slices Prosciutto
- 2-3 Large Handfuls Fresh Spinach
- Salt & Pepper
- 1/2 Cup Mozzarella Cheese shredded
- 1/2 Cup Oaxaca Cheese shredded
- 4 Eggs
Instructions

Preheat oven to 475˚ F.

Mix up pizza dough according to the directions on the packages and let sit.

Heat a medium size skillet over medium heat. Once it's hot, add about a tsp. of olive oil. Add in the spinach and cook until wilted. Season with salt and pepper. Remove from heat.

Shred cheese if not already done.

Roll out the pizza crust onto you pizza tray. Add 1 Tbs olive oil, garlic and Italian seasoning.Spread out the prosciutto slices and sautéed spinach. Top with cheeses.

With your fingers, make a 4 small wells for the egg by moving away some of the cheese. Crack an egg into each well.

Bake for 10-15 mins or until the cheese is slightly browed and the egg whites are no longer runny.

Let cool for about 5 minuets, slice and enjoy!
