Paleo Chia Seed Protein Pancakes

A protien packed and delicious breakfast that is so quick to whip together.  With so many benefits collagen protien can provide, you will want these every morning!

Servings 2 8” Pancakes

Ingredients

  • 1 Banana
  • 2 Eggs
  • 1 Tbsp. Chia Seeds
  • 1/2 Tsp. Cinnamon
  • 1/4 Tsp. Nutmeg
  • 2 Scoops Collagen Protein Powder
  • Cooking Spray
  • 1 Tbsp. Almond Butter or Natural Peanut Butter Optional
  • Fruit for topping (blueberries, strawberries, sliced banana) Optional

Instructions

  1. In a small bowl, mash banana with a fork.  Add eggs, chia seeds, cinnamon, nutmeg and collagen protein powder. ( I like Vital Proteins Collagen Powder)


  2. Heat an 8” frying pan medium heat.  Spray with cooking spray and pour in half the batter. Cover with a lid to help the center cook.  

  3. Flip once the edges start to pull away from the pan and the center is firm enough to flip.  Cook on other side for another 45 seconds to 1 minute or until the center is cooked and firm.

  4. Top with your favorite fruit or topping.  (My favorite is to spread on a little almond butter)
