Buffalo Chicken Loaded Sweet PotatoesHappy Tuesday!  I meant to post this recipe for Crockpot Buffalo Chicken Loaded Sweet Potatoes yesterday but things got crazy!  Did you see the eclipse!  I hope you were able to get away from work or school or wherever you were to see it.  It was pretty crazy.  Here in Denver we got to see it 92% complete.  It was a little eerie outside during the fullest point.  I felt like I had sunglasses on because the color seemed off.  We could also feel the temperature drop. And did you get a chance to look at the shadows from the trees?  Way cool!  I guess if you missed it, you can always wait the 7 more years for the next one.  NBD.

How about these Sweet Potatoes!  I may be a little biased but they were delicious!  When I was little, I would love when my mom would have baked potatoes “with all the junk on top” for dinner.  We would have diced ham, turkey, cheese, sour cream, black olives, onion and bacon bits loaded as high as we could on top our baked potatoes.  That was definitely my inspiration for this recipe with a slightly healthier take.

If you’re like me, you can’t seem to force down another grilled chicken breast and sweet potato.  Staying healthy is definitely not easy but this recipe makes enough buffalo chicken to last a couple of days.  Make a burrito or top a salad with it for a quick and easy lunch.  Or just make a couple extra potatoes and have it again!  And did you know that Franks RedHot is Paleo approved?  I put the #%&* on everything!

Crockpot Shredded Buffalo Chicken

Prep Time: 15 minutes

Cook Time: 4 hours

Total Time: 4 hours, 15 minutes

Crockpot Shredded Buffalo Chicken


  • 4 Chicken Breasts
  • 1 1/2 Cups Franks RedHot Sauce
  • 1 Tbsp. Coconut Oil
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Black Pepper
  • 4 Sweet Potatoes
  • 1 Cup dairy-free plain yogurt (I like Bellwether Farms )
  • 2-3 Green Onions- sliced
  • 4 Strips of Pork Bacon or Turkey Bacon


  1. Spray the inside of the crockpot with cooking spray. Trim chicken and place in your crockpot.
  2. Add in the buffalo sauce, coconut oil, garlic powder and black pepper. Mix well to coat chicken and cover for 4 hours on high or 8 hours on low. Shred the chicken using to forks to pull apart.
  3. Wash and prick potatoes with a fork. Microwave for 8-10 minutes or more until soft inside.
  4. Cook bacon in microwave according to packaging.
  5. Top potatoes with shredded chicken, yogurt, green onions and crumbled bacon.
  6. Enjoy!

Workout Wednesday: 8-16-17

Welcome to Workout Wednesday!  For a few weeks now, I’ve been thinking about a weekly post showcasing my favorite workout of the week.  Many of my workouts are done at the gym so I make up my own workouts.  I have nothing against classes but honestly, it’s just hard for me to make it to classes with my 12 hour work schedule.

I plan to post my favorite workout of the previous week, one that leaves me feeling energized and accomplished.  My goal is to help you find new exercises, gets you out of your gym rut or just provide some encouragement to get moving!

With all the craziness in our lives, of course it is hard to find time to take care of ourselves. I struggle with that every day! But I hope that this Workout Wednesday segment will keep you motivated and keep you feeling great!


Cardio: Walk/Run- 3 miles

Circuit 1:

Complete each exercise then repeat circuit for 2 more times for a total of 3 rounds

Assisted Pull-ups– 10

Push-ups (regular or on knees)- 10

Situps– 20

Rowing Machine- 1 minute

Circuit 2:

Complete Each Exercise then repeat circuit for 2 more times for a total of 3 rounds

Lunges with back foot elevated– 12 each leg

Dumbbell Deadlifts– 12

Jump Rope- 1 minute

Circuit 3:

Complete each exercise then repeat circuit for 2 more times for a total of 3 rounds

Lying Floor Strait leg lifts- 12

Dumbell Front Raises– 10 each arm

Dips– 15

Plank– 1 minute

It’s been a little cooler here and have been hearing talks of an early fall.  I know I’m not ready for that yet!  Summer is my favorite time of the year!  Dresses are a definite must in the summer because they are so easy.  There is no planning and coordinating tops with bottoms.  They are great for traveling because you can save precious luggage space by only packing one item.  This basic black t-shirt dress is one of my favorites.  Its comfortable, easy to love in and can be styled so many ways.  Plus you can buy several of the many colors available because it’s under $20!   This dress also comes in a tall which I realized after posting these photos is what I need. I saw that it looks a little short for my 5’11” frame.  If you are taller than 5’9″, I would recommend buying the tall size.

Today I styled my dress with an army green cargo vest.  This vest is lighter weight but adds a fun layer in the warmer months.  This vest will be great to wear in the fall with a pair of jeans, boots and a long sleeve tee or plaid shirt.

My nude heels can seriously be worn with any outfit.  I know you have heard me say I love a block heel and have been wearing this pair all summer.  For a price tag of under $30, you could get the black ones too!

Happy Saturday!  What are you up to this weekend?  We will be getting ready for my sister’s engagement party next weekend so my to do list is about a mile long.  🙂
