Happy Monday all.  Ready for another busy week?  I’m feeling super motivated after a blogger event this weekend at Coperta in Denver.  It was great meeting with many Denver bloggers and what a cute restaurant to meet at!  I was able to talk to several bloggers who have been at it for a while and I am coming away feeling so inspired.  I was not sure what to expect and thought everyone would be so secretive about what they do how they got to where they are now.  Actually, it was just the opposite.  Everyone I talked with seemed overly willing to help out and provide guidance.  They were genuine and encouraging!  I want to thank the Denver Bloggers Society as well at Swoozie’s, Vithal, and Coola Skincare for our goodie bags.

Since then, I have been thinking bout some things I want to write about and am super excited for some things I have in the works and that will hopefully be helpful to you.  As always, please leave comments or topics you would like to hear more about.

Pizza?  Yes, please!

Who doesn’t love pizza?  Seriously, have you ever heard anyone say “nope, it’s gross, can’t stand it.”  Didn’t think so.  I think you can tell a lot about a person from their favorite toppings. I imagine a person who likes theirs covers with pineapple and jalapeños, for example, to be adventurous and one of those “up-for-anything” types.  And I wouldn’t say that someone who loves a plain cheese pizza isn’t necessarily boring.  They’re just reliable and dependable.

Gluten-Free Arugula and Date Pizza

At our house, we like to go through our fridge and pantry and use whatever toppings we have on hand for our pizza.  Sometimes it doesn’t turn out too great, but many times we find something we would have never thought would go together.  This recipe we have made many times and seem to keep going back to it.  We love to make pizza’s without red sauce and the mascarpone cheese gives this recipe a great creamy flavor.

Gluten-Free Arugula and Date Pizza

As for the crust, I like to make mine with Bob’s Red Mill Gluten Free Pizza Crust Mix.  It’s easy to make and includes the yeast pack.  Just note that you will need to let it sit for 20 minutes to rise, so allow time for that.  You could just as easily use a pre-made crust or even a cauliflower crust.  Use whatever works for you!  I hope you enjoy!
